Day 1 - Arrive Sydney
Blessed with a temperate climate, Sydney is Australias favorite city with the worlds most beautiful harbor. You will be transferred by small vehicle shuttle to to the Amora Jamison Hotel, where you will stay for SEVEN nights.

Relax, acclimatize and this afternoon if you feel like some exercise take a ferry or taxi to Milsons Point to Ripples, where the harbour view is just as special and the food is Italian and designed to share. It's right next door to Luna Park.

The rooms are well-appointed, contemporary in style with warm earthy tones and marble clad bathrooms. This afternoon experience a delicious tour and tasting plate package that combines The Sydney Opera House Tour with world-class delicious alfresco dining at Opera Kitchen. Begin your journey by exploring underneath the sails with a spectacular Sydney Opera House Tour taking you inside one of the worlds greatest buildings of all time. You will see inside the theatres, discover the stories, history and magic of the House and learn of how architect Jorn Utzons heritage-listed masterpiece came to life. You can also decide when to take your Opera Kitchen three-tier gourmet Tasting Plate or Bento Tower, before or after your tour as lunch or return for dinner at dusk or a late supper. Theres nothing more to do than sit back at Sydneys newest dining spot and indulge in our famous oysters, mini wagyu burgers, or fresh sushi and sashimi on the Bento Tower and soak in the Sydney Harbour views. Day 2 - Half Day Harbour Cruise
Board your Sea Sydney Cruises vessel at the Commissioner Steps Circular Quay to commence a 4 hour guided harbor cruise with commentary. Be engulfed by the beauty of Sydney as you 'cruise like a local' aboard Calypso, a 52 foot motor yacht. Cruise the foreshores of Sydney Harbour past world famous, iconic landmarks before dropping anchor in a secluded cove to enjoy a three course Australian BBQ lunch accompanied by regional wines and local beers. Then there is the opportunity to go for a swim, row into the beach, try your luck at fishing or just relax. Cruise concludes at approximately 4.30pm at the Commissioner Steps.

Day 3 - Half Day City Sights tour
An Ultimately Sydney Tour guide will pick you up from your hotel to commence a morning Story of Sydney Tour. Introducing the citys iconic attractions, hidden gems and picture perfect photo (deletes the s) opportunities, including the Sydney Opera House, Bridge and Harbour. This tour unveils Sydneys unique culture, contemporary lifestyle and fascinating past. View some of the most exclusive suburbs, fashionable shopping strips and hip dining precincts including the historic Rocks precinct, Royal Botanic Gardens, Woollahra, Double Bay, Paddington, Chinatown and Darling Harbour. Visit famous Bondi Beach and soak up the atmosphere of this beachside mecca. Rather than transferring back to Sydney downtown we recommend you bid farewell to your tour and spend the remainder of your afternoon at Bondi.

Icebergs is an icon for its perspective on Bondi Beach, its crashing surf below and wow views. Fortunately, despite an Italian accent, the place runs like a Swiss watch, if we may mix metaphors. Superb service, excellent Italian-ish food, people-spotting par excellence and a unique taste of the town. What else is there?

Day 4 - Sydney at your leisure
Now you are orientated enjoy a day at leisure or seek out more culinary experiences - Sydney has a proliferation of amazing places and spaces to enjoy breakfast and brunch: from iconic restaurant bills, where a seat around the communal table represents prime real estate to the sprawling cantina that is Kitchen by Mike, which has a cache of cult followers who dont mind queuing at the counter for service. If your free day falls on a Saturday head east to Eveleigh Farmers Market and you will find on-the-go options such as steamed free range pork dumplings with ginger and tamari dressing from the Billy Kwong stall or the much-talked-about Oh My Goshlette omelette from Bird Cow Fish.

Day 5 - Sydney to Jervis Bay
Pick up your Hertz full size automatic rental car at the Sydney City Depot and commence your drive south of Sydney to Jervis Bay - 125 miles (approximately 2 hours 15 minutes)

Leaving the Sydney suburbs you will continue south along the coastline to the (delete) beautiful Jervis Bay. Travel through Royal National Park (the second oldest national park in the world) and onto the Grand Pacific Drive with spectacular coastal scenery. Travel across the impressive Sea Cliff Bridge past pristine beaches and quaint coastal villages. Travel through Wollongong famous for its beautiful coast lines. Continue south where many lookouts provide breathtaking ocean views both north and south. It's all here - rugged cliffs, sheltered bays, azure blue waters and infinite stretches of golden sandy beaches.

Your base for the next three nights is Paperbark Camp located on the banks of Currambene Creek close to Jervis Bay. A boutique camping experience in a tranquil bush setting close to unspoiled beaches and national parks. Bike and canoe hire is complimentary. There are also easy walking trails through the forest.

The Gunyah is the well-known on-site restaurant serving modern Australian cuisine. Open daily for breakfast and dinner. Picnic hampers can be arranged for lunch and guests are able to help themselves to tea and coffee.

Day 6 & 7 - Exploring Australia’s Oyster Coast
Paperbark Camp is the perfect base for exploring Australia’s Oyster Coast which stretches 180 miles along the pristine waters of the New South Wales South Coast. Almost 100 oyster farmers operate across the region and many can be found in and around the Shoalhaven River, within easy driving distance of Paperbark Camp. Taste fresh oysters at family run farms such as Zealand Oysters, Kingtide Oysters, Newnham Oysters, R&R Oysters or local seafood delicacies at Wharf Rd Restaurant in Nowra or Flanagan’s Dining Room at Thirroul Beach. The region is well known for producing high quality native oysters such as Sydney Rock Oysters, Clarence and Shoalhaven River Oysters, and for its family owned wine makers, boutique breweries, bakeries, olive groves, cheese makers, coffee shops and farmers markets to explore
